 Post subject: Lamb at high temps

So I have two lamb shoulders for Australia day lined up and I was wondering if anyone has had success cooking them at high temps (325F - 350F)

I have a large pork belly I'm cooking at the same time which I'm hoping to get a bit of crackle on if I run at the low to mid 300's.

I know lamb can take higher temps and heat fluctuations but not sure pushing the bbq temp to 350F would be wise if I'm trying to do pulled lamb shoulder.

.... You'd have to get mutton... Leave a bit fat on it to protect it.. Haven't tried it, but if you can keep the hunk to 4kgs should be ok I guess.. If yours is about 3kgs and not much fat cause its a lamb I wouldn't try... Also I wouldn't try it bone in either... Too small of an animal is what will hurt ya, if you get your hands and a bigger guy you'll be ok.. Thinking thermal mass here for protection

I've got two pieces at 1.8kgs each. Sounds like I might need to run it at around 275F with the lamb ribs and the beef meatloaf and the pork belly will need to go in the oven to finish it off towards the end.
