Gents,

The nice guys over at Berties butcher have worked with me to start stocking (and cooking) cape grim Brisket.
as of Monday the 03/01/2014 we will be able to supply all members whom order ahead and mention Aussie Pitmasters with this amazing brisket.

as per the post here viewtopic.php?f=24&t=514

here is what you can expect
briskets will range from 2.5-3.5 kg's at this stage, we are awaiting arrival and will let you know.
from my experience there is little trim loss (probably about 15-20%)
the intramuscular fat makes this cut very forgiving unlike smaller/leaner briskets avaliable elsewhere
the fact that this is a grassfed head of cattle is crazy considering the fat content :)

I picked up one on the way home from work today. First thing I noticed was how tender and bendy it is. I hope this translates into the cooking - we'll see this weekend.

I really want to do pastrami with it!

Just to note the brisket were bigger than expected and came in at 4-5 kg!!

easy as calling them up and placing an order or dropping in.
they may not always have it in stock so much better to call
just let them know you are a member of aussiepitmasters

This is a fantastic offer from Darren at Berties, his Cape Grim Brisket is simply awesome, definitely my goto beef, only if I'm not using Hectors absolutely sublime Sher Wagyu Brisket at 3 times the cost!.

Just ordered a couple of 2.5kg briskest, pork shoulder and some lamb to try out. I'll be cooking the brisket on Friday using my Cheyenne smoker, malli root charcoal and hickory wood, brisket will be covered in Mad Hunky's all purpose rub.
If there are any tips you can give me that would be great as this will be my 4th attempt on the yoga, previous cuts were scotch fillet roll = Yum, Pork Shoulder = I may have slightly overlooked but still yummy and local butcher Brisket = Yum but the thinner edges were dry but the chunkier meat was fantastic.
